Kerala Style Prawns / Chemmeen Roast

A delight for all you prawn lovers! Prawns are an extremely good source of protien, yet are very low in fat and calories,making them an healthy choice of food. Try this Kerala style recipe and I'm pretty sure you will love it.

Ingredients
  
1. Prawns/Chemmeen - 1 kg
2. Green Chilly - 2 medium sized, finely chopped
3. Ginger - One small piece,  finely chopped
4. Garlic - 10 medium sized cloves
5. Gambooge/Kudampuli - 3-4 small smoked pieces
6. Coconut  Pieces/Thengakothu - A handful,finely chopped
7. Shallots - 30-40 medium sized
8. Red Chilly Powder - 2 tsp
9. Pepper Powder -   A pinch
10. Mustard Seeds/Kaduku - 1/2 tsp
11. Coconut Oil - 2 tbsp
12. Water - 2 cups
13. Salt - As per taste


Method

1. In a non-stick pan, add ingredients from 1 to 7,salt and water.


 2. Bring them to boil.

3. When the prawns are cooked, it's meat will turn opaque. 

4. Cook them until all the water gets evaporated and keep it aside.

5. Heat another non-stick pan. Add some oil and splatter the mustard seeds.

6. Add shallots and cook them until translucent.

7. Add red chilly powder and mix them evenly.

8. When the shallots are almost dark brown in color, add the prawn mixture and stir.


9. Add pepper powder as per taste. Cook for another 4-5 minutes.

10.  Wow! And, Kerala Style Prawns/Chemmeen Roast is ready.


11. Serve it hot. Tasty..isn't it..? Yummm..! :)

Note: You may adjust the amount of ingredients according to your taste. You can also add Kashmiri Chilly Powder inorder to add more color.

    I think adding one tomato (finely chopped) at step 7 will be good.
