Koorka Mezhukkuperutti / Chinese Potato Stir Fry


You know, "Koorka Mezhukkuperutti" is one of my favorite side dish with rice. I love them so much. Oh yeah, cleaning koorka is bit tedious. But once cleaned, the recipe is so simple to make and very delicious too. Come on..give it a try..! :)

Ingredients

1. Koorka - 1 kg, peeled and chopped into pieces
2. Green chillies - 2 large, chopped
3. Turmeric powder - 1/4 tsp or a pinch
4. Shallots - 6-8, sliced thin
5. Mustard seeds - 1/2 tsp
6. Dry red chillies - 2 large, chopped
7. Curry leaves - 1 sprig
8. Coconut oil - 1-2 tbsp or for seasoning
9. Water - 1 1/2 cup
10. Salt - As per taste


Method

1. In a vessel, add water, koorka, green chillies, salt to taste and a pinch of turmeric powder. Bring them to boil.

2. Cook them till the water is dried.

3. In a pan, heat oil and splatter some mustard seeds.

4. Add shallots and dry red chillies.

5. When shallots turns golden brown, add curry leaves and stir for a few seconds.

6. Now add cooked koorka and stir well. Cook in low flame for 2-3 minutes.

7.  Koorka mezhukkuperutti is ready to serve.
