Scrambled Eggs / Mutta Chikkiyathu

Are you a beginner in cooking? OK then, why don't you start with this simple and easy to cook Scrambled Eggs recipe? Or are you in a hurry and there isn't enough time to prepare food? Again, this recipe is for you. It  requires hardly any time to cook and of course it tastes fantastic. All you need are some eggs and some veggies. You may add any veggies you like. So are you ready to cook? Here you go.......!!  :D
Ingredients
1. Eggs - 2
2. Onion - 1 small sized, finely chopped
3. Tomato - 1 small sized, finely chopped
4. Green Chilly - 1 medium sized, finely chopped
5. Turmeric Powder - A pinch
6. Mustard Seeds - 1/4 tsp
7. Ghee / Oil - 1 tbsp / As required
8. Salt - As per taste

Method
1. Beat 2 eggs very well. Add a pinch of salt and turmeric powder. Keep it aside.

2. Heat ghee or oil in a pan and splatter some mustard seeds. I used ghee here.

3. Add finely chopped onions, green chilly and stir well. Cook till the onions change it's color.

4. Now add tomatoes and cook till it becomes mushy.

5. Add the beaten eggs to it.

6. When the eggs turn semi-solid, scramble them.

7. Check the salt. If less, add a little. Stir for another 1 minute and that's it...! :) So easy.. right? :D

Serve it with bread or rice. You can even mix it with noodles and have it. :)

Note: You may add a pinch of pepper powder, if you would like to make it spicier. As said earlier you can add any veggies like carrots, potatoes or capsicums. Only thing is that the cooking time will vary then. Else, it doesn't make any harm to it's taste. :D Mmm...then, you love curry leaves and coriander leaves? Don't hesitate. Add them too.. Keep experimenting. :)
