When it comes to tea time snacks, Parippu Vada is my favourite. Having them with a cup of hot tea actually make them much more tasty. Crispy outside..soft inside...and...happiness all over..! :D
Ingredients
1. Kadala Parippu / Chana Dal - 1 and 1/2 Cup
2. Shallots - 9-10,chopped
3. Green Chillies - 2 large, finely chopped
4. Ginger - 2 inch peice, finely chopped
5. Curry Leaves - 1 sprig,finely chopped
6. Kaayam / Asafoetida - A pinch
7. Water - 3 cups or to soak dal
8. Salt - As per taste
9. Oil - To deep fry.
Method
1. Soak dal in 3 cups of water for 2-3 hours and drain. Keep them for few minutes.
2. Keep 2 tbsp of dal aside. Crush the rest in a blender by adding little salt. Make sure that it doesn't turn into a paste.
3. Now add ingredients from 2 to 6 and the uncrushed dal to the crushed dal.
4. Mix them very thoroughly using hands for 4-5 minutes.
5. Take a lime-sized ball of mixture and make into a smooth ball. Then, flatten the ball into the shape of a disc.
6. Heat the oil almost to the smoking point in a kadai. Now add 2-3 vadas into the oil very gently.
7. Fry them until both sides turn golden brown. Drain extra oil in a paper towel.
8. 'Parippu Vada' is ready. :) Serve hot with tea..!
Note: Make sure you add vadas to oil very gently. Else, it may break.
